For those of you who still have the old MAC figures in the original packaging and on the card, do you have those encased in some sort of plastic casing to protect the card? If so, do you have any information you’d be willing to share about the dimensions of the casing and where to possibly get some?

Over time and under certain conditions it probably won't matter. I have all my figures still mint on card, stored away in cardboard box with one of those packets for moisture. I kept it in the basement in fairly temp control room, not exposed to sunlight.
Because figures are boxed different shape and size the only real recommendation to give is use a storage sealing bag and do as close as air tight as possible without bending or have it professionally graded.

I've seen some for specific card types/sizes. Star Wars figures (of course) have appropriately-sized plastic protectors. Entertainment Earth sells supplies like that, I'd look there if you really want it.
Honestly though, Buffy figures aren't really selling for big bucks. I don't think they're likely to increase either. So I'd just display them nicely in a safe place and not worry about keeping it pristine.
I understand if they're something you love and want to protect them for yourself though. I just say don't worry about it if your thought is about future resale value.

Thanks, DanMan. I'll check out Entertainment Earth for what they can do. And, yes, I believe you're probably correct in that the resale value will never be stellar. (Except for maybe the library set--which seems to increase in price each time I see it offered on eBay.) This is for my own purposes.
